A rich piece of chocolate for dessert. Sounds good, right? Well what if it was healthy for you? I think that’s even better.

Coconut oil is one of the must-have ingredients in my pantry because I use this healthy oil to substitute for butter and vegetable oil in my baking experiments. There are many reasons why it is considered healthy (I found my info here):

It’s a saturated fat, which is a good kind of fat
Decreases appetite for unhealthy food, such as sugar
Helps kill bacterias
Speeds up your metabolism
Fatty acids in coconut oil can turn into Ketones, which can reduce chances of seizures

This wasn’t what I originally had planned to make, but I’m so glad I did! In the week, I was thinking about making matcha and sesame mousse, then I realized I didn’t have matcha powder, so I decided to make a simple sesame mousse. Then, of course, I couldn’t find any good recipe to guide me, because it was all chocolate mousse this and chocolate mousse that.

Since the yummy pictures were practically screaming at me to make chocolate mousse, I gave in and made my Creamy Avocado Mousse: Chocolate Version. I changed the recipe slightly (no bananas or grapes) and divided it into 4 cups, but it only filled it about halfway up! Yeah, I didn’t realize that my recipe made only 2 servings. I didn’t want it to be a boring dessert and use another avocado (gotta save that for my breakfast smoothies!), so I decided to make another layer on top of my chocolate mousse, but this time chocolate and sesame together!

My Favorite Overnight Oats

If you’ve been reading this blog, you might have read somewhere in my previous posts that I really don’t like oatmeal. This statement still holds true. But overnight oats, on the other hand, as I have discovered the greatness of them two days ago, is so good! And due to me saying that I do not like oatmeal, I have decided that overnight oats shall not be classified as oatmeal.
