This moist bread will rock your world. It has chai tea, medjool dates, almond milk and oat flour, which work so well together. I had never tried tea in baking before, but now I can tell you that I’m hooked! It tastes delicious and all those spices wafting out of the oven door is killer to the senses.

I added walnuts on the top, which give it some extra crunch and taste amidst this dense bread. It’s gluten-free! I usually don’t care if it’s gluten-free or not, but I had a gigantic bag of almond flour (purchased, of course, at Costco. Where else would we get big bags of anything and everything?) so I decided to try and experiment with it. I know a few people who have problems with gluten and they literally cannot eat anything with flour, or only in small amounts, which I definitely would hate because I love baked goods!!! There are oats in this, but they do not contain the protein gluten which is found in wheat, barley and rye grain, instead, they contain a protein called avenins so oats are still gluten-free.

The Healthiest Chocolate Chip Oatmeal Cookies

Not only are they healthy, they taste awesome too! Coconut oil helps keep it all together and the oats are so flaky and delicious. This is the first time I’ve used oat flour ( I grinded oats in a food processor), and it acts exactly like regular flour! Make sure you grab a bit before everyone finishes it off.

The cookies are best eaten with a plate under so all the crumbs that fall can be picked up and eaten! Oh, and I just wanted to say that chocolate is my favorite thing to eat. Ever.

One piece of advice: Don’t forget to add the sugar! I made that mistake and realized it just after I had finished placing all the cookie dough neatly on the tray, all ready to go in the oven. My Favorite Overnight Oats

If you’ve been reading this blog, you might have read somewhere in my previous posts that I really don’t like oatmeal. This statement still holds true. But overnight oats, on the other hand, as I have discovered the greatness of them two days ago, is so good! And due to me saying that I do not like oatmeal, I have decided that overnight oats shall not be classified as oatmeal.

I love making these and testing new flavors, like bananas and toasted almonds. And they’re really convenient because in the morning you just have to take it out of the refrigerator and add some toppings!
