Comfort food for these cold days. But still healthier than normal, with turkey instead of beef, and kidney beans for antioxidants and protein. And it’s super good! The chili peppers give it a bit of a kick, and with the beans, it tastes wonderful.
With a slow cooker, this is so easy to make. Just dump everything in the pot and continue on with your day! And if your vegetarian, you can always replace the turkey with sweet potatoes, more beans, etc.
But before you do that, you have to cook some ingredients first. Sauté the chopped onions.
Then add in the turkey meat to cook it until it’s brown. Mix in the tomato sauce, cooked kidney beans, and crushed spices. (If the beans aren’t cooked yet, heat up a large saucepan of water, then cook the beans in the saucepan for about 30 to 45 minutes, or until softened.)
Transfer the whole thing into the slow cooker and cook on high for 4 hours, or on low for 8 hours.
Yum is all I can say.
