Avocado Shrimp Wrap

This nutritious, tasty wrap is always one of my favorite lunches. The shrimp is naturally a bit salty, and combined with avocado, it just, somehow… works. And if you don’t have a tortilla wrap, no fears! The avocado and shrimp mixture tastes great on its own.

It’s very simple to make, and all the veggies that are in it provide you the minerals and vitamins to make you feel great and energized all day. There are also cranberries and walnuts in the mixture, which is one of my FAVORITE combinations with avocado. I’m not joking when I say it’s one of my favorite combinations. Sometimes for lunch, I will simply mix together an avocado with just a handful of walnuts and cranberries and eat it just like that. That’s how good it is.

To make the avocado shrimp wrap, I mashed an avocado (of course not including the skin or pit) with a fork in a bowl.

Then I add the chopped bell pepper, cherry tomatoes, walnuts and cranberries.IMG_9154

Finish off by adding in the shrimp.

To eat, wrap in a tortilla wrap with some lettuce. But honestly, like I said before, the mixture also tastes great by itself. You can even wrap it in the lettuce instead of the tortilla wrap!

Avocado Shrimp Wrap

  • Servings: 4

Ingredients:
1 avocado
1 bell pepper, diced
1/4 cup cherry tomatoes, halved
1/4 cup walnuts, chopped
4 tbsp. cranberries
8 shrimps, peeled and cooked
8 lettuce leaves
4 tortilla wraps

Instructions:

  1. In a bowl, mash the avocado (not including the skin or pit) with a fork. Mix in the bell pepper, cherry tomatoes, walnuts and cranberries.
  2. Add in the shrimp and divide the mixture equally among the tortilla wraps. Cover with lettuce before wrapping. (You can also eat the mixture by itself or serve wrapped only in the lettuce.)
